Pizza with 'cherry' on top!
Grow your own food, leave out what isn’t necessary and enjoy what you have…….this is all that comes to my mind when I think about this pizza. May not be the best pizza in the world….but pure joy for the eyes…. who wouldn’t get excited about all those tiny little warm flavorful cherry tomatoes – coated with a mix of herbs , thyme, rosemary and oregano in extra virgin olive oil, some olives, the bubbly melting cheese, the crispy crust…… It takes such a little effort and no fancy gear, but the reward is so huge. A simple yummy food!
It was a very long wait for my tiny lil girl who planted sometime in early May, the seeds of cherry tomatoes in all the colors she could find….. golden, orange and red! Everyday thereafter was exciting in her life. She gave them a lot of water, sunshine and indeed a lot of love – exactly what they told her to do in one of her favorite shows, “The Little Einsteins”. She watered them so gently, tied each new branch to the support, counted the flowers and then the fruits every single day; some times once in the morning and again in the evening. And finally…. finally here comes the day, when so many of her cherry tomatoes are juicy and colorful and so ready to be picked. With her big brother’s help she collected as many as she could… the rest… do I need to say?
Pizza with 'cherry' on top!
Preheat the oven to 425F keeping the Pizza stone in.
2-4 garlic Naans
Mozzarella cheese cut into thin slices
cherry tomatoes
Olives
Thyme, Oregano, Rosemary, Green Onions (every single one is optional)
Olive oil
Salt & Pepper
Add half of the cherry tomatoes and put them in a bowl. Slice the olives and green onions and add to the bowl along with the cherry tomatoes. Take out the leaves of the herbs, add salt and pepper and combine them with hand in another small bowl. Add the olive oil and mix again. Add this mixture to the bowl of tomatoes, and mix well.
When the oven is ready, take out the pizza stone and spread some olive oil on it. Arrange the Naans. Arrange the mozzarella slices on them. Spread the tomato mixture over the cheese. Bake it for about 20 minutes.
