Guacamole
All the kids in the neighborhood including ours love guacamole and I love making it for them. It is a pure joy watching them enjoy something as simple as that… especially my ‘one year old baby neighbor’ with her big smile, showing her two teeth, who enjoy walking all around with one chip dipped in guacamole…On hot days, we will have impromptu get togethers with chips, salsa, guacamole and some fresh lime juice; when we put out the sprinklers and the pool on our front yard. The kids have lots of fun; watching them parents too. A blessing to have such wonderful neighbors!
I usually buy the absolutely hard organic avocados two days before and leave them on the countertop. They can also be stored in the refrigerator for a few days with out getting ripened; keep them out for two days before use. By the end of these two days, the avocados will be ripe – just right!
Guacamole
2 Ripe Avocados
1/2 Key Lime
1 Clove of Garlic, finely chopped
1 Tbsp Chopped Cilantro
Salt & Pepper to taste
1 Green Chili (optional), finely chopped
Add the finely chopped garlic and coriander leaves and the chili (if using) into a small bowl. Add salt and pepper.
Cut the avocados into halves by slicing slowly down the center lengthwise around the pit, starting at the narrow end. Holding the avocado in the palm of one hand, use your other hand to twist and rotate the two halves apart. To remove the pit, gently strike the pit with the knife, twist, dislodge the pit and lift it out.
Spoon the avocado flesh into the bowl. Squeeze the lime. Gently mix with fingers, but don’t overdo it. Adjust the salt, pepper, lime etc. to taste. Enjoy!
